Try These Delicious Banana Muffins as a Calorie Conscious Treat

Finding low calorie snacks that fill you up can be difficult. As can finding healthy options if you love baking!

These muffins taste delicious and are only 130 Calories each.


They are easy to make as well!!

Coconut Oil

Use a liquified coconut oil to mix easier. If using a solid oil, you'll want to melt it into a liquid. If this is the case, please wait until it cools before adding eggs or it will slightly cook the eggs. Ew

Honey

Again, using a liquid form honey will make mixing much easier. A more solid honey will need to be melted and will need to cool.

Bananas

I store my old bananas in the freezer. Before using for the bread I defrost in the microwave for 1 minute which makes them much easier to mix in!
Fresh bananas also work! But who uses fresh? LOL We all have sad black bananas sitting in our freezer and this is their moment to shine!

Eating!

I enjoy my muffins with peanut butter! Give it a try!

Preheat Oven
For Muffins 375
For Banana Loaf 325

Mix oil and honey; add eggs and beat well; whisk in bananas and milk

Add in baking soda, vanilla, salt and cinnamon

Stir in flour

Pour into a loaf pan, or spoon into muffin tins and sprinkle with cinnamon

For muffins, bake for 15-18 minutes
For a loaf, bake for 55-60 minutes

1/3 Cup Coconut Oil

1/2 Cup Honey

2 Eggs

1 Cup Mashed Banana

1/4 Cup any type of milk

1 Tsp Baking soda

1 Tsp Vanilla Extract

1/2 Tsp Salt

1/2 Tsp Cinnamon

1 3/4 Cup All Purpose Flour
